The OH and I did enchiladas for the second time last night. We used a well known yellow, Mexican themed brands' Enchilada Kit.
I love them, can't believe I haven't been eating them for longer!! The OH likes them too, but after a while she finds them a bit too spicy. Now, I know we could just use a bit less of the spice mix when making the tomato sauce but that would be too simple
Does anyone have any tried and tested recipes before I go and scour the internet for our next attempt?!

that looks like a decent sauce recipe, maybe drop the amount of chilli powder and add in some paprika/cayenne instead for flavour.

I don't know why folk bother with ready-made mix. I just add chilli (to desired strength), garlic, other ingredients and a tin of chopped toms, heat for a bit then make up the enchilladas to go in the oven.
If the chilli gives an unexpected heat then add a dollop of natural yogurt to her plate, dip each forkful in yogurt to cool the heat.
