Hi food lovers.

I'm looking for your cheesecake recipes - specifically a strawberry one. After attempting a cheesecake last night, not the baked variety I'm not overly happy with the result. I used a recipe from Good Food magazine. The actually cake part didn't set very well even though I followed the recipe to the letter.

Did you leave it overnight to set?

There are many versions of unbaked cheesecake, some you cook out the egg yolks, some use gelatine, some just use marscapone and cream, what sort were you looking for?

Do you want a dense thick texture or light and fluffy?

I did leave it over night, about 12 hours in the fridge.

Fluffy and light would be great.

It's actually not too bad now for some reason, maybe it was just the top - it's all gone now anyway!

I used double cream, vanilla pods and cream cheese. I'll try and other method this weekend with gelatine.

a 3 year old thread with only 4 posts in it.

Anyway.....


Cheesecake (non baked variety)

Cream cheese? double cream? digestive biscuit base? (heard mention of mixing porridge oats into the base as well?)

fruit & sugar mixed for the topping?

Leave for 12 hours... eat.

Anything else?

Best recipes?

600g cream cheese (50p per 200g @ Tesco)
280ml double cream
100g icing sugar
flavouring (vanilla, strawberry, bailleys etc)

Whisk to desired consistency.

Base
250g digestive crumbs
100g butter

melt the butter into the crumbs and then lay at the bottom of a sring form tin, I put clingfilm or parchment down first. Refrigerate and do not put the topping on until fully set.


I have made many many cheescakes, some involving jelly, gelatine, condensed milk, evaporated milk and more such nonsense. This recipe is the definite winner.

Digestive and butter for the base. In the fridge to set.

Full fat Philadelphia whisked with caster sugar to taste.

A good bit of minced ginger and a little powdered for bite whisked in.

Melt white chocolate in the microwave being careful not to burn it (blast it for no more than 10secs a time) . Mix thoroughly with the cheese mix.

Topping onto the base. Stick it in the fridge. Job done.

You can replace the ginger and white chocolate with whatever you want. Lemon curd on top of the base, then some grated lemon rind and lemon juice in the topping works nicely (for example).

You can add cream to the topping, but I don't think it adds much other than calories...

Success.

Added crushed strawberries before serving.



I'd probably use more biscuit next time to have a thicker base.

Godly but don't have if diabetic. She also only awd two cups of sugar and still easily to sweet. So nice.

This is my tried and tested recipe. It never fails to impress. I'm not a cheesecake lover but can't get enough of this one!


INGREDIENTS:
6oz digestive biscuits (12 biscuits)
3oz butter
2x200g packs of full-fat Philadelphia
Half a pint of double cream
Small yoghurt (flavour to match the topping)
6 tbs sugar
1.5 capfuls vanilla essence
Fruit for topping
Quick Jel

METHOD
Melt butter in a pan, crush biscuits until fine and add to pan - mix well.

Press mixture firmly into a spring loaded cake tin and place in fridge to cool.

Empty Philadelphia ionto a bowl along with the yoghurt and whisk together until smooth. Add sugar and vanilla essence and whisk again. Add cream and whisk until firm.

Spoon mixture onto the biscuit base and level the top. Decorate with the fruit of your choice, follow instriuctions for making Quick Jel and spoon evenly over fruit.

Just made this... Not had a slice yet but from the bits of tasting I did during the making its shapin up to be a good 'un! Cheers for the recipe.

Must get the recipe my mum used for years when I was at home.

Butter & digestive base.
Evaporated milk, philadelphia and jelly whisked to make the cheesecake. In the fridge till it sets.

Job done.

Just can't remember the exact quantities...
