I've had a really good year with my tomatoes does anybody have a good recipe for preserving green tomatoes, apart from chutney?

I've heard that if you put some in a brown paper bag with a ripe banana in a dark place then they'll ripen smile
Don't know if it is true, but could be a simple experiment to try out smile

Thanks but I've already seen a lot of the tomatoe recipes on the net. we're talking about 10kgs of the things and I've already got a freezer full of tomato ketchup and tomato sauce, both of which taste wonderful and it will be nice to have the flavour and tang of home grown tomatoes all winter.

Pickled vegetables feature heavily in East European cuisine. Try this Russian recipe for pickled tomatoes:

I think the Russian pickled tomato sounds good, so will give it a try. The rest I will ripen and make some BBQ sauce and freeze it. If I have some left I might take them to the Malton meeting Anna, are you going and did you get to make any elderflower champagne?
