I have a quantity of raw prawns to use up today and thought a Vietnamese style salad might be nice, I think I'm sorted with the recipe for that (although input is welcome) but would like to make a side dish to go with it, something simple ideally smile

My salad will be made up of a dressing of fish sauce, lime juice, seasame oil, chilli, sugar, garlic, mint, coriander leaves, spring onions, red onion. This will go over prawns, rice noodles, strips of carrot, cucumber and pepper, maybe some cherry toms I have to use up too.

I have a few turkey breasts in the fridge so was thinking a side dish or starter using those might be nice - what do you reckon?

You can get them free round the back of Waitrose, scavenging in the bins.

Satay is a good one, or you could do some Bang Bang Turkey:

Gently poach the turkey breasts till just cooked, then cool/ice to stop them going dry.

Once cooled down, finely slice or shred the meat. mix in a handful of shredded Spring onion (about 3 stalks) and a handful of shredded cucumber (about a quarter of one).

make a sauce from the following:

1 Tbsp black rice vinegar (or vietnamese vinegar if you have that)
2 Tbsp sesame paste (or mix tahini with peanut butter if you dont have it)
3 Tbsp Soy sauce
1 Tbsp sesame oil
1 Tbsp brown sugar
1 Tbsp szechuan pepper

and as much chilli oil as you like (usually about 1-2 Tbsp, depending on how spicy you like it)

pour the sauce over the shredded meat and veg, then sprinkle some sesame seeds on top.
