For the best traditional Paellas in Spain go to the Paella village of El Palmar - half an hour south of Valencia & the village is packed to the brim with restaurants serving traditional paella & other rice dishes.
Every year in Valencia around ( 5 - 14 Sept ) in Sueca where chefs from around the world compete in the International Paella Contest on the Paseo de la Estacion to find the best International Chef for Paella.
Or check out Arroz a la Banda which has its own festival in Benidorm/Alicante
It is a 2 part dish, the first part is fish poached in a typical fish stock in a Paella dish & served with Alioli, the 2nd part is rice cooked in a paella pan with a type of squid in the fish stock & served when the stock has attained a really sticky but liquid consistency.
The best of these dishes are served in a village called Petrer just outside Alicante and the most well known is The Mermaid ( La Sirena ) Avda Madrid 14
