Hello,
Got 2 best end rack of lamb (3 cutlets in each rack)
Any suggestions?

If the fat is still on them and it's tender enough I like rack plain roasted with a little rosemary.

If the fat has been trimmed away you could go for a breadcrumb crust. I've no particular favourite but AllRecipies.co.uk will have a range of suggestions.

Teryaki works well. Aim for medium not rare as the lamb benefits from a bit of temperature through it.

Otherwise, pan fried, oven finished with lots of seasoning and fresh herbs. Thyme also works with lamb.

I'll pan fry to get colour and season well. just bought some fresh herbs and i'll chuck that on too and will finish in the oven.

Roughly, how do you judge to take out of the oven?

OMG
It was wonderful smile
I think this could be my speciality smile
The mash was A1
The mushy peas A1
The meat, OMG, So tender, but one down side it could have maybe done with 1/2 minutes less in the oven to make it a bit more pink smile

Done it again today, and it was nice and pink, and when i bit into it, it came straight off the bone, only back thing is i could of eaten another three or at least my brothers smile YUM YUM

Pulled them out at 20 minutes, let them rest for 5minutes and they were perfect, Lamb with some fresh thyme and rosemary.

Boiled some spuds and had them in the tray, sprinkled some salt and pepper over these with a light dash of olive oil about 20minutes before the lamb went in and they became my attempt of roast potatoes smile

Should i use "special salt" i use normal salt but all the chefs seem to use flakey sort of salt?

Might have to have a go at honey glazed carrots next smile

You've done it now but mint, rosemary, garlic and a small amount of breadcrumbs bound with honey is cracking on the back of a rack.

Thanks will make sure i get this for when i try it out next time.
Break crum's, can i just get a load of stale old break and create my own in a blender?
Honey, Do you recommend any particular brand?
And can mint, rosemary, garlic, honey all work?

Im actually drooling over this now..
Just need to have a crack at a bit of pork/beef/ etc now smile

You need some Maldon Sea Salt. Far less harsh than normal table salt.
