I'm 90% sure that I'm going to get two single fan ovens in the new kitchen - currently have a decent AEG 'double' oven which is a one-and-a-half with the bottom being a fan oven and the top one is a grill and conventional oven but the top oven bit is useless.

No real idea what the difference between them all is and I don't think I'll use much other than the fan oven, pizza oven (so the bottom crisps up) and the grill. Seen some Gorenge ones that are extra wide inside, giving more space for grub.

Any suggestions?

I'm not as bothered about the 'design' as whether the oven works well: heats up quite, keeps temp etc

I'd second that idea! go for an fan oven and half, and seperate fan oven! maybe even go for an eye level one.
