As per the title really, I'm cooking a chilli for four people and I wondered how many of these little babies to use.

I guess it will depend heavily on the chillis you have, and on the tastes of those eating it.

I'd start with one, leave the seeds in, and then taste it as you go - if you need more its no problem to add more. If you start off with all 4 and it takes the back of your head off, then you're in trouble and may have to start again.

Have a large pot of sour cream, salsa and guacamole handy to damp down between mouthfuls!

All chillies differ in strength and flavour and some of the supermarket ones have almost no heat at all.

The only sure way is to taste one and see how hot it is, then decide how many you're likely to need for the amount of heat you want.

I tend to use a mixture of dried ancho, habanero and chipotle chillis along with some fresh red and green chillis. It adds a bit of depth and smokeyness to the dish. I also use a mixture of minced beef, stewing beef and stewing pork and I simmer it for about 5 hours until the meat breaks apart.

Last time I made chilli I put in a couple of de-seeded Apaches from the garden but by the time it was ready they tasted just like regular peppers. Odd, because if you eat them raw they are pretty firey.

Probably just needed more thumbup
