Everytime I go to Gaucho they bring out that tray of bread with some delicious cheesy bread balls that I am informed are Argentine (obviously).

Anyone know what they're called and more importantly, where I can buy some?

They're called chipas. No idea where you can get them from, unfortunately.

I love Gaucho, even the dipping sauce they brinf to the table with the bread.

Is that chimichurri? And if so, is there anywhere to buy it or is it a case of making your own?

You will probably have to make chipas yourself - its not difficult and there are plnty of recipies on the interweb.

Anything specialist is easy enough to get from http://www.mercadoargentino.com

One of those things that's easy and best made to suit your own tastes. Make plenty of it, and enjoy. Then make a different one next time smile
