hi guys,got a load of xmas dinner leftovers,ie sprouts,potatoes,parsnips,stuffing ,peas etc...fancied attempting a plate of bubble.

any good tips.

throw it all together in a frying pan, a little oil, season, high temperature.

Probably find you eat most of it while it's cooking anyway hehe

Chop it up coarsly or stuff it a mixer and give it a quick smash with the blades, but I'd leave out the stuffing and peas personally, then just fry it in some oil or lard if you've got it.

Soften some onions in butter, fry some lardons. Mash potato and chop larger bits of veg. Mix, squish into cakes and fry, or if doing a lot a squish into baking tray and stick in the oven for 1/2 hour.

Not bubble & squeak though is it... you don't use mash you use left over roast pot's and it has to be fried smile

Yours is a sort of chefy type thing...

According to Jamie Oliver - it needs to be at least 50% potato to hold together properly but apart from that, add what you want. Make sure you season it adequately, assuming it's constituents haven't already been so (leading to over-seasoning). Cook in a mixture of olive oil and butter to get a nice cripsy outside bit.

Yum.

Not so you can mash roast pots, a chefy thing would be topped with a poached egg bow

just eaten it and it was superb,some good tips there

nobody likes to see food go to waste...went for the mash it up and fry in oil method.

I did just that a couple of weeks ago. Runny poached egg over bubble & squeak is superb.

Agreed although I have a fried egg on the basis that B&S is already fatty so best to add more!

Do smaller bubbles, about the width of a black pudding slice, serve on the black pudding, top with an egg (poached or fried).

It's the Monday breakfast of champions after a sunday roast and you can make it Sunday night just frying everything in the one pan on Monday morning.

Lots of potato content, finely chopped veg and don't be scared of burning it. It is best burnt around the edges and crispy.
