I'm about to pluck a hen today and I usually take a couple of leisurely hours at it. Do it ouside as the feathers get everywhere. Someimes I just skin them and use the breast only, but if you want to roast the bird and want it in pristine condition...
Lay the bird on it's back and pull ( one at a time) it's breast feathers in the opposite direction to which they would normally grow. Then do it's legs, by this time you're probably thinking it's too much effort, so just cut off the tail and wings with a sharp pair of scissors - use a butcher's knife to cut head and feet off. Remove guts and wash your bird to remove any lurking bits...then stick in oven breat down with chopped apple pieces in it's cavities at 190 deg C for approx 40 mins
