Escalopes of Pork with Oriental Puy Lentils

Inspired by calibrax on the Photo of your Dinner thread I thought I would do some breaded Pork escalopes. Then I spotted my camera on the table and...

First make up some breadcrumbs. Here we have sage and toasted pine nuts, blitzed up.

Start on the apple sauce. It's just apple, some all spice powder and some butter.

Wash some lentils, dice up some peppers and red chilli.

Chop an onion.

Fry off the onion, peppers, chilli and a little chinese 5 spice in olive oil.

Make up some stock. For mine, I took last night's roast chicken carcass and slung it in the bin, then used some of that liquid stock stuff.

Add the lentils and stock to the other frying goodies.

Some pork.

Put pork in bag.

Beat s
t out of bag with rolling pin. I think Delia calls this "lightly tenderising".

Flat pork bits go in flour, then beaten egg, then breadcrumbs, then back in the egg and finally back in the breadcrumbs. Top tip from calibrax

Put pork bits in a hot place for a few minutes.

Sauteé off some Pak Choi in a little white wine.

Looks very tasty! And it's nice to know I'm an 'inspiration'! My tip about double-dipping in the egg works well doesn't it? Really ensures you have a good coating on the meat.
The breadcrumbs with sage and pine nuts sounds gorgeous, I'll have to try that. I was thinking of adding a little parmesan as well next time.
