Carrot Cake Recipe

I'm in the mood for baking. I'm already armed with my Mum's sicky parkin cake recipe, but does anyone have a good carrot cake recipe?
Shop bought ones always seem to be a bit dry, but when you do manage to find a good one, they're fantastic - probably my favourite cake, especially when they have the good cream cheese icing. The last time I had a decent one was in New York, last May.
So come PHers, help me out. And if anyone has a good raspberry and almond cake/slice recipe, we're getting married. Whether you want to or not!

Moist Carrot Cake
9oz (250g) wholemeal Flour
6oz (175g) raw sugar
(muscovado or Barbados)
6oz (175g) soft brown sugar
3 x size 3 eggs
6fl oz (175ml) sunflour oil
2fl oz (55ml) soured cream
2 teaspoons pure vanilla essence
approx 1 tsp freshly-grated nutmeg
2 level tsp cinnamon
1 tsp bicarbonate of soda
11oz (300g) grated carrots
3oz (75g) desiccated coconut
For the topping
4oz (110g) full fat soft cheese
2oz (50g) unsalted butter
2oz (50g) sifted icing sugar
Juice of 1/2 a lemon
Pre-heat the oven to gas mark 2, 300F (150C)
Grease an 8inch (20cm) round cake tin (lined with
greaseproof paper) and two mixing bowls.
Place the eggs, oil, vanilla essence and soured cream in
one mixing bowl and sieve the sugars into it. In the other
bowl sift the flour, nutmeg, cinammon and soda.
Beat the wet ingredients and sugars together then fold in
the dry ingredients, followed by the carro
followed by the carrots and coconut.
Mix well to distribute everything evenly, then spoon
into the cake tin and bake o the centre shelf for 1 and 1/2 - 2
hours.
When the cake is cool, mix the topping ingredients
together and spread evenly over the top.

- but my Mrs made up some banana cake muffins the other day, and we always have stacks of carrots in the house (1. the rabbit likes them 2. the son likes them), so we'll have to give this a go! Cheers
