Was watching Monsieur Blanc the other night making some very pleasing chocolate desserts. One in particular (the delice) I thought I'd have a stab at.
Looks straightforward, all I need is the pastry frame (as the narrator called it) - basically a flat sided metal frame, measuring 20cm x 14cm x 3cm.
So, a few google hours later, not a bloody thing.
Pastry frame, pastry mould/mold, cake frame, cake mould, tart ring, tart case, baking frame, baker's frame, and yes, even a baker's ring, didn't give me what I was looking for. Then started trawling through catering supplies websites and supplies supplies, can't find it their either.
Anyone seen one for sale anywhere and/or know what the thing is called?

The Choclate Delice appealed to me too. Having looked pastry frames they are way too expensive for the amount of use I would get from them, hence im going to give it a shot using a 9" cake tin with removable base. Hopefully once it has set I'll be able to push it up out of the tin with any damage.

I too have spent three days searching online for these and a few phone calls. You might find this of interest, a bit smaller than the ones used by mr blanc but presumably you aren't looking to open a restaurant!

Nice find that man..it's actually a bit bigger than the one listed in the recipe but no harm in making more of it I reckon!I too have spent three days searching online for these and a few phone calls. So my pastry frame arrived and I thought that was going to be the difficult bit! Where does one get Praline Paste from? I found it online in one store but it's out of stock and another store it's 15 quid a kilo (Twice the price of the out of stock one!). Anyone have a supplier?
