Anyone have any tips for cooking ostrich and/or recipe ideas?

I have a small fillet steak, and 9 medium sized ostrich meatballs.

Could the fillet steak be cooked, sliced and served up as cold cuts, or does eaten cold impair the flavour?

Treat it like turkey.

Works fine cold.

Also very good in curry.

it's very lean so don't over cook it or it'll end up dry.

I'd cook the fillet like a beef fillet steak - rare.

Try the blowtorch method unless you can brave a nice charcoal bbq in this weather!

Holy thread resurrection !

Had Ostrich steaks for tea last night, delicious ! Flash fried for 2.5 mins for medium, served with a peppercorn sauce.

Really enjoyed them. Dense rich flavour & a lot cheaper than fillet steak !

Remove fillets from packaging and allow to breathe at room temperature for at least 10 minutes. There may be slight odour on opening which will not affect the quality or the flavour of the fillet. Pat dry with kitchen paper.

It is best to season ostrich meat after grilling, as salt can cause loss of meat juices.

Do not overcook ostrich, as the meat will be dry and tough.

For best results use a heavy-based grill pan.
Brush fillets with olive oil on both sides.
Heat the pan until smoking hot and grill the meat, turning occasionally.

Rare: 2 mins each side
Medium: 3 mins each side

Rare is best.

Anyone know where to get raw ostrich steaks from? The ones I've seen in the supermarket are pre-cooked.

Lidl do them frozen.
