Eating the rind on Stilton

My wife always cuts the rind off any Stilton she eats, I'm inclined to as well, but later, when I find the peices of thick rind in the kitchen awaiting disposal, I invariably eat them. And very nice they are too, the flavour, although obviously Stiltonesque has something else quite interesting about it too.

I've never suffered any ill effects, but people have raised their eyebrows. Does anyone else eat their's, or am I mildly insane?

You're not alone - I used to eat it too.

Interesting link. I've always cut the rind off stilton but I'm definitely going to give it a bash now.
