Duck legs for dinner
Discussion
I will be eating ducks' legs for dinner. You will note the apostrophe being carefully placed after the 's' suggesting two things:
1, that I am eating more than one duck leg
2, I believe that said ducks' legs are from two different birds and therefore are not a matching pair.
Stay with me.
They are drying in the fridge with a fine layer of salt on their skin. Hopefully by 7pm tonight they'll be ready for roasting.
Question:
What shall I eat them with?

Is it too late to do this.. http://en.wikipedia.org/wiki/Balut_(egg) to them?
Or maybe just with a nice bit of steak?

Thanks for the excellent suggestions guys.
I roasted them crisp on a wire rack, beneath which were lots of baby new potatoes which bathed in the rendered fat.
To offset the richness of the duck I chopped a green salad of cucumber, lettuce, celery and cress and then made a dressing from hoi sin, sesame oil, red wine vinegar, chili and black pepper.
I boned the crisp duck and cut it into long strips, added it to my salad along with the potatoes and drizzled with the dressing.
