Anyone got a tried and tested vanilla recipe? I've tried a couple in the past - one was a full custard recipe (came out too custardy in taste!) and one was a non-cooked variant (from the Ben & Jerry's cookbook, IIRC) which wasn't rich or tasty enough.

I'm considering trying a gelato recipe - perhaps number two from here but with proper pod as well as essence.

Any suggestions? smile

Here you go

This is simply epic, and easy to make without an ice cream maker. It has a 'cheesecake' tang due to the fromage frais.

The recipe is easy to adapt to vanilla rather than nutmeg (just substitute the nutmeg with the seeds scraped from a whole vanilla pod, soaked in hot water), however lemon and lime zest also work well.

Keep the vanilla pod to flavour sugar.

scratchchinBetter than 'standard' vanilla? I would have been put off by the marscapone and fromage frais content...

Is that why you recommended that recipe, or just a bonus? (I have a Gaggia, BTW.)

It's a bonus. Just try it. The flavour is everything - depending on personal preferences of course, and what you're intending to serve it with. I like this with apple pie, or grilled pineapple.

Tarte tatin, yes. Tarte citron, no.

ETA: You could use double cream in place of the creme fraiche and mascarpone, however I'd be inclined to search out a 'vanilla ice cream recipe', rather than do that.
