Making home-made guacamole, quick question though - how long will it keep in the fridge after I make it, I'm guessing 24 hours tops?

Seal it from the air (small container) and add it bit more acid, and you'll get three days. The avocado will go brown, but it'll taste much the same. No more.

Try subsituting the avacado for broad beans (skins removed) for an alternative which keeps better. (great on fajitas BTW)

Lots of lemon juice, and cover the surface with cling film.

Lime juice surely? That's what I use.

I like the broadbeans idea, would it work with peasas well?

I've kept mine in the fridge for 2-3 days and it's been fine. Never went brown (or changed colour in any way).

Apparently (from my little kit) if you mix in some ascorbic acid powder (ie, vitamin C) then that will keep it from discolouring...

And it doesn't alter the taste. Also use it in place of lemon juice in water etc get a big pot cheap from the chemist.

I agree with this. I always add some lemon juice.
I forgot once and it did turn grey. It was only a superficial layer and after a stir with a fork you wouldn't know the difference.
