I need a really easy chutney receipe. I have decided to try something else this year once I have finished making jam.

I've a feeling lots of people this year will be stuck with tomatoes that won't ripen.

I found a Keith Floyd recipe for green tomato chutney which seems easy enough, and I'm going to give it a try:

Ingredients (makes 8 jars)

15g/½oz root ginger
8-10 chillies
2kg/4lb green tomatoes, chopped
500g/1lb apples, peeled, cored and chopped
250g/8oz raisins, chopped
625g/1¼lb shallots, chopped
2 tsp salt
500g/1lb brown sugar
570ml/1 pint malt vinegar

Method

1. Bruise the ginger and tie in a muslin bag with the chillies.

2. Place all the other ingredients in a preserving pan and suspend the muslin bag among them.

3. Bring to the boil, stirring until the sugar has dissolved, and simmer until the desired consistency is reached.

4. Remove the muslin bag. Pour into warmed sterilised jars, cover and label.

[Personally I'd chop the ginger and chillies and leave these in the mixture, with some pickling spice for company.]

Runner Bean Chutney

2lb runnerbeans sliced or chopped( food processer)
1 1/2lbs onions chopped finely ( " )
1lb demerara sugar
1lb soft dark brown sugar
1 heaped tblsn dry mustard
1 heaped tblsn tumeric
1 heaped tblsn cornflour
1 1/2 pints of vinegar

Cook beans in boiling water until tender -drain well.
Cook onions in 1/2 pint of vinegar.
Mix dry ingredients together to a paste with rest of vinegar
Add to the onion mixture with the beans.
Boil for 30mins until thickened

Leave to mature for 2 months.

You are not wrong there. I have 4 plants in the garden with loads of decent sized tomatoes on them that are resolutely staying green (I have only had 2 tomatoes ripen). Annoyingly my parents and grandparents have had a fair number of tomatoes from their plants and they all were all propogated together from the same batch of seeds -I suspect this may have something to do with the fact that we live in Scotland (even though we have had great weather). So thank you for that recipe, looks like I will be giving that one a go.
