I'm finding that when we're 'cooking' frozen fish, the outside is usually nice and crisp, but the inside has a tendency to be soggy and mushy.

Now mushy peas I don't mind, but mushy fish?? NO!!

We're using a fan oven for this, and following instructions on the box.

Are we doing something wrong? Or is it meant to be like this?

It tastes ok although bland.

The brand is Youngs by the way.

Snap - in the past.
Despite any claims on the wrapping that say "cook from frozen", I never do, now.
Worst case scenario: defrost in the microwave first.

However I have found the most wonderful frozen fish by Birds Eye. Its fich in a bag with sauce. Last night I had Tiger Prawns in sweet chilli sauce which i served on fresh spagetti. It was lush.

Turn the oven up a bit? Manufacturer's estimates of how much lower the temp should be on fan ovens is rarely accurate.
