Got myself a simply gorgeous looking pork spare rib joint, rolled... nearly 5kg! and I'm expecting this to crackle up beautifully (once I've scored it a bit more), as it has the perfect amount of fat under the skin. Have now cut it into two joints for the freezer. If I hadn't had pork yesterday, one joint would be in the oven right now!

I am actually having pork, what's left over from yesterday's shoulder roast! another joint would be a bit much though!

The first joint cut from this is now in the oven!

Defrosted it yesterday, and last night dried, scored and salted the rind. Then I put it in the fridge, uncovered. Took it out at 10am, lightly re-salted it, and put it in the oven at 230c for 15 mins. It's now slowly roasting at 150c, and already the crackling looks absolutely superb. I'd even say it's my best yet! It should darken up a bit by the end, but so far so good. biggrin

The finished article (now resting before carving)... super light crisp crackling, melt in the mouth delicious! Well chuffed smile

OP, may I ask, what camera do you use to get such brilliant pictures?

Camera is a Panasonic Lumix DMC-FZ7.



It's only 6 megapixels but it has a big Leica lens which more than makes up for it. I take the close up photos with the flash on, but at a very high shutter speed (1/1300s) so you don't get much glare, just nice brightly illuminated pics. And the battery lasts for ages - I've had cameras that will run out after half a day, this one will go 2-3 days easily before a recharge is needed, even with lots of use. Best camera I've ever owned, absolutely love it. Can get them second hand now for under £100.
