Satay Sauce recipe?

Has anyone got a good one?

I want (ideally) the same gloopy consistency you can get in a polystyrene pot from the local chinese takeaway. Failing that, any good recipes will be gratefully tested smile

I don't know if you mean satay sauce as in a peanut dip/coating sauce or a cooking sauce? There are so many varied tastes and ideas out there

I've never followed a recipe but when I make a satay at work, I normally just bung it in and go on taste frown
I normally make it with frying off chilli, garlic, onion and making the sauce out of coconut milk, peanut butter, soy
I've always put a bit of curry paste in mine and made a curry out of it rather than a coating sauce, so the above may be wrong for coating

Sorry smile I meant the dipping sauce, like you'd expect to get with chicken satay skewers.

Grind the following to a fine powder
30 dried chillies, soaked
1 tsp of Blachan - roasted (smelly!)
2 roasted garlic cloves

2 1/2 cups water

50g gula Melaka (palm sugar)
1tbsp tamarind soaked in water
150g peanuts - roasted skinned and ground
1tbsp sugar
1tbsp dark soya sauce
Salt to taste

Combine ground ingredients water and gula Melaaca in a pan. Bring to boil. Add tamarind water and peanuts. Stir as simmer until thick. Add sugar and soy.

Hence using peanut butter is easier !

I'd go with 3 Tbsp of Peanut Butter.
15ml Dark Soy sauce.
20ml Water.

Mix together and job done in less than 30 seconds.

Peanut butter and sweet chilli sauce is a good cheat's version.

This Jar of Satay Sauce is spotty dog,non of your Sharwoods muck here.its really a stir fry sauce but if you are feeling lazy,mix with a little coconut milk and some peanut butter,the flavour is something else,it has all Noger's ingredients in it,great for marinades as well.i buy it from the Chinese supermarket,can't recommend it enough..
