Can anyone recommend a good mulled wine recipe?

With the temperature in Texas dropping below 60degF in the evenings and a new outdoor kitchen I feel it's time to mull.

Preferably from base ingredients, none of those spice tea bag things that you have to go out and buy.

Thanks!

85g demerara sugar
1 tsp ground ginger
½ tsp ground nutmeg
1 cinnamon stick
70cl bottle red wine
8 - 12 cloves
1 orange

Stud the cloves into the orange, bung everything in a pan with half a pint of water (optional I guess) and simmer for 5 mins.

We've been using a slightly modified version of this http://www.jamieoliver.com/recipes/other-recipes/j... and I really like it.

That is my favourite modification to regular mulled wine recipes, a good slug right at the end of the warming process!

Do you kill the slug before putting it in?

Having run out of brandy recently, a recent experiment shows that Cointreau is a great replacement (not just for the brandy but also the oranges that I forgot to buy!)
