Making Mince Pies

Can't get the search to work for some reason, so apologies if already done, but does anyone have any recipes or tips for making mince pies?
I remember making them as a kid and wanting to get in the festive spirit thought I'd make some this week.
I can obviously follow the basic recipes I get while googling (make pastry, put in tray, add mincemeat, add lid, coat with beaten egg, cook, icing sugar) but does anyone have any tricks or tips to make something a little special?

I like the Jamie method.
Roll out puff pastry and cover with mincemeat.
Roll up into a swiss roll thing and slice into 1 inch sections.
Get some Filo pastry and place over the top of a 12 tray baking tin.
Put one each of the sliced m/m roll into each segment and bake off.
Then seperate when cooked.
Dust with icing sugar.
Result is a nice crispy outer edge that looks great,and puff pastry inner.
