Any excuse to have you lot shoving your mighty Canon up the parsons nose and all your family thinking you are mad whilst you shout "But it's for the premier motoring forum in the whole of the UK!"

So to start us all off



From small acorns mighty oak trees grow! wink. Actually that is a bit of a lie because immediately after taking that photo I felt a bit peckish and ate it.

Anyway, it is a start to the 2010 Christmas meal PHoto bonanza

We're going to friends for Christmas lunch tomorrow. The chap is a bit of a foodie, the menu has already been sent via email (Powerpoint slides laugh). By looks of it there is a veggie going as well (more pigs in blankets for me)

Starters:
Prawns & Smoked Salmon with Marie Rose Sauce and (un)seasonal leaves
Or
Brixworth Pate & Melba Toast

Mains:
Oven Roasted Norfolk Black Turkey and/or Nut Roast
Potatoes "three ways" - Duchess, Veggie Roasted and Goose Fat Roasted
Honeyed Parsnips
(lots of) Pigs in Blankets
Sprouts with Pancetta
Carrots Vichy
Spiced Red Cabbage
Two types of Stuffing - Proper and Veggie

Dessert:
Flaming (mother-in-law's) Christmas Pudding
Chocolate Pud
Brandy Butter
Chantillly Cream
Tokaji Aszu Puttonyos 2005

Will take the camera and try not to appear too much of a berk taking photos of the spread.

wow that's a good spread! I'm not sure I'd want that much effort but I'm sure it will be good

Is it cured? From the colour it looks it. Just be a bit careful with that as it will increase the cooking time of the breast meat and if cured the flavour will be absorbed by the turkey.

Top job though!

I'm preparing a 7 course meal, albeit spread over the afternoon otherwise we'd be in dire need of Gaviscon. I'll post photos of the ones that turn out OK wink

Course 1: Smoked salmon, crushed black pepper and cucumber terrine served with lemon and dill.
Course 2: Winter soup - roast parsnip, carrot, smoked bacon and potato
Course 3: Chicken liver pate* with toast
Course 4: Venison sausages wrapped in honey marinaded, oak smoked bacon.
Course 5: Christmas dinner - Roast turkey with a sage, onion and lemon stuffing; roasted goose fat potatoes; butter roasted parsnips; misc greens that nobody will touch in favour of the turkey. No sprouts.
Course 6: Eton Mess
Course 7: Baileys and caramel coffee served with homemade oat, ginger and chocolate chip biscuits

  • - shop bought, not home made
Update 10pm Xmas eve - Terrines prepared although the consistency of the mousse was a bit runnier than usual - I hope this does not result in horrible, falling-apart terrines tomorrow. Soup prepared and tastes like victory. Bacon for the sausages is currently marinading in a honey and salt bath. Everything else is defrosting. Attempt #1 at the homemade biscuits has resulted in failure - I got overambitious with the proportions and ended up with biscuits that were burnt at the edge, chewy in the middle, and breaking apart inbetween. Not sure if I'll try again, or abandon the exercise in favour of cracking open one of the many biscuit tins that the inlaws will surely have bought us.

Happy Christmas PH'ers!

Breakfast (for 1, as SWMBO doesn't like it) - smoked salmon and scrambled eggs on croissants a'la Gordon Ramsay, and some pink fizz.

Well under way:






Beef went in last night plan is:

Breakfast - best kept light - G&T

Lunch - 2 rib of beef (18hr cooking rubbed in mustard power, salt, brown sugar), suckling pig ~30" long (head may have to come off so the kids don't get scared...), sausages+bacon, maple parsnips, sprouts and chestnuts, mashed turnip, steamed carrots, roast pots (goose fat, rosemary, garlic etc), gravy (lots) and some other nibbles and stuffing of course. Oh and some home made coleslaw

Pud, gingerbread house with chocolate, meringue and marzipan decorations, chocolate log tree, trifle with white choc custard, Christmas pud ice cream.

Laters - home made pork pie (12" diameter!), cheese, biccies cured meats, home made cheese straws/pastry things with anchovies and parma ham.

Some fantastic stuff already !

The powerpoint menu made me chuckle.

Hope all goes well. I got a chicken and guinea fowl and then found a turkey drumstick in the freezer so I am doing a 3 bird roast, but not as a normal one, all separate (cheater!). Only 4 of us, one old lady, my wife, my daughter and me. Looks like I'll be eating most biggrin

Venison's been in the slow cooker for a while already, in red wine, garlic rosemary and thyme.

Breakfast to be eggs'n'cured bacon, with [aussie girlfriend]champagne[/aussie girlfriend] (hardys sparkling)

The pig up there ^^ looks yummy.

Seeing as everyone else is now in bed so I have naff all else to do I may as well post pics of ours smile

Crispy Gressingham duck with cranberry sauce
Roast potatoes and parsnips with (duck giblet) gravy
Parsnip and artichoke mash
Honey and orange glazed carrots
Spiced red cabbage (apple, sultanas, red onion, cinnamon, nutmeg, ginger, red wine vinegar etc)
Veggie option of a parmesan/spinach/parsley roulade

Was all pretty nice and most of the timing worked. Duck was lovely.





I realise my portion is not very manly but I did have seconds....and thirds....

This was the only shot I got of the end result. There was only 5 of us (1 veggie) - that's not even all of it carved. So, so tasty!

Starter -

Peas + Wiltshire ham plus carrot + coriander soup with added beef pastrami

Ciabetta bread

Mains -

Turkey crown (a whole turkey de-legged and de-winged) stuffed with a halved orange and onion with garlic slice inserts.

(Turkey legs and wings were separately boiled with peppercorns/ coriander seeds/ cardonum seeds/mace/ for soup/casserole

Sage, cranberry and red onion stuffing

Parsnips – Tesco Finest honey coated
Glazed Chanteney carrots
Red cabbage
St John’s green cabbage
Sprouts with butternut squash, sweet potatoes and streaky bacon
Boiled celery and leeks

Aunt Bessie’s roast yorkies

Mashed potatoes

5 spice and herb gravy

Photo is pre-cooked as I got p!ssed and scoffed the dinner!
