My favourite soft cheese. It has a hoppy, musky flavour and is very oozy if taken at room temp.

I can heartily recommend it with good crackers and gherkins

An individual thing I think, however I'm a big fan of a runny époisse in the society of a log fire, crusty bread and a good Nuits-St-Georges...

I'm with MC. Figuratively of course as I'm a bit too sexy.

I have also enjoyed taleggio recently though - it is rather yum.

Not really a cheese man,

I like nice soft mature Brie, but hate stilton

It's more flavourful than Brie so I would say worth a shot. It's great on puff pastry parcels with thyme and red onion.

I think the one you are thinking of is Casu Marzu(sp?) which is Sardinian i think.

Northern Italians use Pecorino cheese and let the flies do their work on that. It helps break down the fats. They are tiny little cheese mites, not really the large maggots you see when fishing for example.

Not one for me, i must confess!
