Thai Salad Dressing help

Tonight for dinner i'm having the remains of a roast chicken with some cold noodles in a kind of Thai salad with Chilli and rocket, however I don't have a dressing. Does anyone have a recipe I can use?

Couple of chopped spring onions.
Cruched clove of Garlic
Grated ginger
3 tsp light Soy
1 tsp tomato ketchup
2 tsp rice vinegar

All into a jam jar and top up about half full with oil.

Shake it for 30 seconds.

Perfect. I suppose I can add some fish sauce and chilli to bring it alive!!

I often add lime too. I would have said chilli too, but you were already serving it with chilli and rocket.

I can imagine that on grilled fish with a slice of lime on the side. One for the summer! YUM
