This I think.You can add anything to it. My favourites include:
- frazzled chorizo
- roasted peppers
- grilled tomatoes
- roasted onions / garlic
- roasted squash / sweet potatoes
- preserved lemons
- chick peas
- chopped flat-leaved parsley
- fresh mint
- fresh coriander
- chopped chillies
- meatballs
- falafel
- chopped dates
- chopped dried apricots
- toasted pine nuts
- toasted almonds
- sultanas
- a waft of cinnamon
- harissa sauce
- pomegranate seeds
- hoummous...

I kept nice oils (various infusions) & balsamic in my desk drawer. Used to stop off on the way to work to pick up fresh bread rolls. That with a nice cup of tea kept me going and was certainly simple.
Sometimes I brought in cheese, cold meats, smoked fish if there was in the fridge but more often than not it was just a couple of little ciabatta's or similar.
(Only problem was the smell of fresh bread made me hungry so only about half of it actually made it into work)

I don't have a microwave at work and am getting bored of sandwiches or resorting to Pot Noodles to break it up a little bit. Does anybody have any suggestions on cold lunches for work that are relatively easy to knock up of a morning?

I'd recommend we burn you on the fire so you go to hell for all eternity, but considering you don't want to do that -
1 x maple syrup
Some sliced apples
Some creme freche
Some brown sugar
No more words needed, and a nice pudding for your Pot Noodle.

Quickest and easiest is to boil and chill a batch of pasta on a Sunday afternoon which you can keep in a box in the fridge all week. Then just buy two or three jars of pasta sauces or pestos and keep in the fridge at work.
Each morning fill a lunch box with cold pasta and add the sauce at work so it doesn't get soggy. Add salad, tuna, olives, feta cheese etc at home as you feel like it.
