The pub I go to make a fantastic steak pie with the gravy a really dark brown colour almost like a dark chocolate colour. It's really rich and quite salty which really goes with chips, peas and thick stodgy pastry. I have tried to copy it but just can't seem to get the gravy right. Any ideas? I was going to attempt it this weekend with gravy salt, something I have never used before. Looking online gravy salt seems to be made out of salt and sugar. Does anyone use gravy salt? Does anyone have a clue what im on about? Give me your best steak pie or stew recipe.

The gravy has probably been reduced a lot before adding to the pie hence being very salty!! Try beef stock, red and cook some braising beef long and slow until the meat is falling apart. Remove the meat reduce the sauce and add to the pie.

Never come across gravy salt btw

Slow cooking the beef in Guiness would come out very dark and rich.

I normally make a beef pie from the remains of a previous roast beef, having made onion gravy from the juices from the beef. Normally tastes pretty good!

Hugh's Steak and Ale pie from his MEAT book comes out like this...

As someone else has hinted, remove the meat and set aside and then reduce the syrup like gravy further and that should do teh trick. WIll intensify the flavour enormously.

Oh, and make it the day before required obviously smile
