In which case have a go at the lamb I did the other day...

Not as complex as it sounds and leave out the spinach layers and it's pretty simple really. Even if it goes a bit wrong you will end up with some serious brownie points for trying

How about Italian style with sun dried tomatoes and mozzarella? I've made this before, it's dead easy and tastes gorgeous..

Serve with couscous mixed with a little tomato paste and some roasted peppers, courgette, red onion, olives etc thrown in. Looks far more impressive than it actually is.

I seasoned the Lamb in Rosemary and olive oil for 3 hours.
Then quickly pan fried the lamb in olive oil, rosemary, cracked black pepper and cracked sea salt.
Wrapped the lamb in proscuitto and then oven cooked for 15 minutes at 100C
To make the sauce I used 200ml of chicken stock brought to the boil. Two teaspoons of Dijon Mustard, a splash of white wine and some grated/chopped golden delicious apple. This was combined but not allowed to boil. I then used a 1/3rd of a tub of single cream and allowed to just boil.
