Coming up I have a meal for 8 to cook. My theme is French cooking.

Think I have my plan sorted, but struggling with dessert choice.

To start Chicken Liver Pate

Main Duck Confit

Dessert, to be confirmed. Either choice I shall make a vanilla ice cream to go with it.

Tarte tatin.

Sugar and butter in a pan, coxes apples rounded side down, puff pastry round the top of the pan.

The sugar and butter turns to caramel, the steam causes the pastry to drop into the bottom of the pan and the caramel goes into the pastry. Wack it in the oven for 40 minutes.

Serve has hot as you can bear it!!

Tarte tatin but do individual ones using halved apples in a muffin tin. Bit of ice cream with them and extra caramel with calvados. Definite winner.

Tart Citron every time. Maybe taited by so many Le Mans memories and that last year Vanessa made one with our own lemons as I was not able to get over to france for the race. Can be made before and trotted out with the ice cream. Simple, tasty and IMO more every day french. The only alternative would be a pear or parisian tart.

Happened to my AX GT, left the oil pump (and quite a bit of oil) on the Snake Pass rolleyes

But definitely Citron.

And no tart's bottom.

For some time I was set on the Tartin, but I think a day or so ago the Citron came to mind and I just thought it was the perfect 'antidote' to the other dishes.

Looks like the the Citron then which happens to please/suit me.

I have seen a few with meringue swirl toppings...yeah or nay to that?

If you want to ponce it up, you can dust the top with icing sugar, then heat up a skewer on the hob and singe a pattern ?

classic tarte au citron for me the only proper topping is a light dusting of icing sugar

I prefer a Tarte Tatin, but Au Citron would be the better fit after this menu.

I made a Tarte au Citron tonight for the first time and it was (I have to say) gorgeous. I served it with Carte D'or vanilla ice cream which went down a treat here. I shall make my own ice cream, but have to say that Carte D'or is nice eh?

Shall I make a fresh post re vanilla ice cream recipes?!
