Egg noodles - unexciting!

I'm making some nice Thai fishcakes for tea, and was going to do some egg noodles to go with them (been sat in the cupboard for too long!). The problem is that egg noodles on their own are somewhat boring, any ideas on jazzing them up (all I'm thinking is to chuck in some chopped steamed mange tout and a drizzle of toasted sesame oil). The curve ball is I'm doing slimming world so can't cover it completely in oil/butter/lard etc!

Chopped red and green chillies will spice it up a bit, maybe add spring onions and some soy sauce.

I do Singapore noodles fairly regularly so was thinking something else. Dan Dan looks nice, but lots of oil and not quite what I was after this time around.

spring onions, peppers and garlic, sliced very thinly, flash fried and mixed in with soy sauce smile

I like soft noodles with sour, crunchy flavours to contrast the doughy-ness.

so thai style noodles with lime and chilli, or chinese style tossed with diced cucumber, rice vinegar, soy sauce, a pinch of sugar, and a drizzle of chilli oil and sesame oil.

Stick an oxo cube in the water when you rehydrate them, for a start

In mine I add garlic chilli and grated ginger, sweet chilli and peanut butter in at the end; not much of the last two though if dieting

I rehydrated, then dry-fried with onion, garlic and chilli

Johnny does a great meal with fresh Egg Noodles, red, green, yellow Peppers, mixed Chillis and Cashew Nuts. Served on a bed of rocket salad with seared (in chilli) Tuna Steaks. Is one of my favourite meals.
