My doctor has said that I am 10kg overweight and said I need to alter my evening meal diet (currently takeaways) to prevent further back pain.

He's advised me to cook baked fish or chicken along with steamed vegetables in the evenings as the best way to get my weight under control.

Sounds a bit boring to me, so is there anyway I can spice up the meat to make it more interesting? Steamed veg or boiled peas is ok with salt and pepper but the meat/fish sounds too bland.

Are there any decent cookbooks I can read to do something quick and healthy in the evenings?

Much of south-east Asian cuisine is low in fat: I'd get a copy of Rick Stein's 'Far Eastern Odyssey' and go from there (though watch the peanut / coconut sauces).

Get a bamboo steamer, layer some bok choy, choy sum and snow peas, then a nice piece of fish. Steam for 10-15 minutes depending on fish.
Simple sauce – mix of oyster sauce, small bit of vegetable oil and some asian chilli sauce (brick red stuff) with a dash of sesame oil.

Easy as, healthy and delicious.

I'm not much of a cook so relatively easy but interesting is to mix some plain yoghurt with curry powder, lemon juice and turmeric (if you have some) and marinate some sliced chicken breasts - overnight or half hour, whatever. Then grill them, adding a little of the marinade if necessary. Makes a mess of the grill but easy, tasty, quick and healthy. Salad and rice, done.

You can get a range of Schwarz (and others) seasonings to sprinle on chicken etc. Chargrilled is ok but I fry chicken or turkey, onions, sliced green peppers with fajita mix and lime juice, in wraps with discovery salsa (not so sugary as others), salad.

Maybe try sachet of watercress sauce on your baked white fish (can freeze half) or make the veg interesting with mediterranean veg spice mix (Schwarz etc sachet).

Not top cooking, but easy and not too unhealthy.

Btw losing 10kg prob won't fix your back.
