I've got defrosting a saddle of lamb. Was just going to pop it in the oven for the required time, but does anyone have any scrumptious ideas on how I can cook it?
Thanks.
H.

I would roast it hot and fast with as many fresh herbs and root veg you can get. Serve it nice and rare.

That looks fabulous, but my lamb is still boned so don't think I want to start hacking up such an expensive cut, I'm not that skilled! But would love to give this a go one day.

I think this is what I'll end up doing, along with some Jersey Royals.

Yep, keep it simple. A saddle is a fine cut and some decent veg, few herbs and thats it. it's all about showcasing the meat.
