Further to my rant a few months ago about home cooked food in a restaurant, anybody else noticed this ruse: Pizza restaurant advertising wood fired oven pizza but not a piece of wood in sight? Presumably gas fired for consistent heat.

Place near me has their oven labelled Wood Stone. I haven't asked what that means. Maybe it has some wood in it but it's certainly not 100% fired by wood.

As a fat git who has an unhealthy obsession for a proper neapolitan pizza I get more annoyed at the lack of places that don't sell them. The local italian which won the F Word award for best local italian make pizzas in a standard bread making oven!

The one near me certainly is completely wood fired.

stone heated up by a wood fire inside, then ashes removed and stuff cooked

or, wood burnt close to it and heat redirected into the oven

Hugo if it's the former then what's the point? Only the latter method would produce the smoked style of cooking that the name implies.

I don't mind if it's not done in an oven burning wood as its fuel source I just think it shouldn't be advertised as so it if isn't! I'll judge the pizza independently.

dunno, but that's how bakeries etc all used to be

wood fired, stone baked

smoke goes up the chimney

YES !!!

Came across this and it bugged the fk out of me. Looked like the real thing but inside had a gas burner over fake wood.

Anyone care to chime in with suggestions of good wood fired oven pizzerias then? I live in Leeds where we seemingly have none. During trips to London in the past few months I have tried both Franco Manca at Brixton Market, and Santa Maria in South Ealing. Went out of my way to try both of them and they were both decent. Would rate Franco Manca higher though due to the taste of the tomato sauce

Best place in Leeds is Harpo's on Street Lane in Alwoodley, used to be opposite the Box in Headingley. Not wood fired but the best around.
