Can anyone recommend a tastier, spicier, more suited to the BBQ sausage than the mighty boerwors?

I was organising a barbeque this weekend and I wanted something a bit more interesting to go with the usual stuff.

So I popped into my local South African shop, and came out with a big hadnful of these scary looking coils of sausages.

I have to say they cooked brilliantly - barely any fat or filler so they remained plump, without creating much fiery flame. And are they meaty or what?

A big thumbs up from me and the family, I'll be getting some more for sure!

Merguez is the daddy on the BBQ. Spicey with a hint of paprika yum

Boerewors (note the spelling) is unbeatable. Although do note that even boerewors can differ wildly depending on the recipe and meat used.

The top South African butchers compete in regular national competitions and jealously guard their recipies. Occassionally you may come across a butcher who has used meat which isn't up to the task, or doesn't use the same mix of spices which might be acceptable to your palette, you might have a bad experience.

Although I'd rather have a bad boerewors than a mediocre pork sausage. tongue out

yes

I have loads of professionally made ready-mixed quality borewors 'spice mix' which needs to be used this year at some point. A little more than Im going to be able to use myself and among friends.

Happy to send some to the first person who wants some.
No charge. Postage on me smile

If you cant make your own sausages, what you can do is:
- Fry up some pork mince
- Add spices, fry further, turn it into a gravy (to reintroduce the moisture naturally contained within a sausage casing)
- Eat with chips or whatever you fancy your boreworse mince with.

Anyone feeling brave enough to try cooking with spices from a stranger on the internet? wink (I genuinely have more than Im going to be able to use!)

Boerewars is best moist, I prefer it when it is only just cooked. With English Mustard and Mrs Balls Chilli Chutney in a finger roll, my favorite treat.

Also the Chilli or Peri Peri Boerewars is pretty special, when they say hot, they mean hot (unlike the poxy Waitrose Vindaloo that I had tonight, twas barely a Jalfrezi)

I'm game - PM sent! This would make a great BBq rub or burger mix. I'll post back here with an update (as long as I'm not poisoned or arrested receiving dodgy powders from a guy on the Internet ;-)

Its on its way to you matey. Will be in tomorrows post for you. Ive not rubbed it on burgers - good idea. Will give that a go next time we do burgers on the BBQ!

PS, try not to tell too many people where it came from. Just in case you do die, id rather it not be traced back to me wink

You might be thinking of the coriander, which is it's um... 'Primary flavourant' as the recipe goes.

I'm a merguez fanboy too. Though I also adore a hot salty french saucisse with blow-your-head-off dijon mustard (not the maille stuff).

it is mixed meats (beef & pork generally) sausage with lamb fat and coriander seed, how can you go wrong ? lamb fat is the tastiest wink

Hmm I find Merguez a bit garlicky, one of the reasons I like boerewors so much!

Almost as soon as the Boerewars hits the grill, pinch off a piece from the end so it's not cooked. Best way to get the true flavour...mmmmmm.
I havn't been ill yet. smile

With a drop of lemon juice...I agree that the chef's testing/tasting bits are the best.
