Help to understand a song please?

I am currently ever so slightly obsessed with Kat Edmonson's cover/arrangement of the classic 'Summertime'

As a none drummer/casual listener/have a basic understanding of music, I'd really like to understand how this is all put together please.

I can see pentatonic scale in it ( https://www.youtube.com/watch?v=ne6tB2KiZuk ) but I'd like to understand how the beat/timing works between the voice/piano/percussion/trumpet.

It's one of those tracks that seems completely at odds with itself, but comes together beautifully but I have no idea how or why. Can a musician help me to understand what is going on please? I'm sure it's music appreciation 101, but I can't get my head around it.

If nothing else, it's an under appreciated track worth listening too

cross rhythmic.
Piano playing triplet crotchet chords over a straight 4/4 feel.
Trombone plays the solo.
I guess later it becomes polyrhythmic.

You could analyse it as two different metres at playing once.

I've never been that keen on the tune, but that version is fantastic!

I need to work out the chords to it now!

Seems to be in Ab, but neither major or minor.

I get the first chord as Ab5 (no 3rd), followed by F5 (no third), then E (b5) , back to Eb5 (no third), and back to Ab5.

If I add either a major or minor third to any of the above chords, it doesn't sound right.

I blame the Jameson's distillery for confusing me, and getting my Ab and Bb mixed up!
