Having owned both a M400 and now a GTR I'd like both in my garage.
Nobles are only getting older, so if you have one on your shopping list sooner would be better than later, after all the Ultima is still in production.
The Noble is easier to live with from a get in and go point of view.
The Ultima is always more of an occasion.
ETS sorry didn't spot you had a Nob already.
I suppose the power question looms, I have no doubt that it is easier to tweek a Chevy and get big numbers at a better £££/ BHP ratio than a Noble.
The g/box set up on an ultima also lends itself to high torque nubers easily unlike the Noble unit.
One other thing, if you are into track days, the Ultima doesn't have power steering, so prolonged stints will have you pumped like popeye.

As you already have a Noble and an M400 at that I would try to get a ride in both a LS7 and LS3 engined car, that way you'll be able to compare the power to your Noble although with our cars the kick in your back is linear and never ending, unlike your Noble.
Are you planning to build or buy?
You'll find that the quality of the Ultima is better than Noble as it's not built down to a price, the wiring doesn't have any scotch locks and the battery and relays are where you can get at them plus they don't get wet!
If you have any Noble luggage bags then keep them as space is at a premium in the Ultima, the GTR is better than the CanAm but you inventive, there are a few on here that go on Euro trips and some include a track day in that.

Having sold my Sports 2000 race car back in 2005 and built an extension at home, I spent the best part of 18 months to 2 years researching, viewing, considering a wide variety of cars to replace the old race car - always wanting something extreme but road legal! It finally came down to the same question you are posing here... GTR or Noble? I even got to the point of having the choice on two specific cars, a GTR or Noble. I had already viewed other versions of each, but time had come to make a decision? Funny that both cars started out being built by the same individual! Anyway, I chose the GTR as I wanted a more basic 70's technology muscle car that was extreme (to say the least), but 'could' if one is careful enough, be driven on our wonderful British roads. Don't get me wrong, I almost bought a Noble GTO3 but I considered it to be just a little too technical for me, too much to go wrong and potentially expensive, just my humble opinion.
I've now owned my GTR for 6 years, time does fly fast! It's been interesting, costly sometimes and even annoying from time to time as everything seems to be a one off but mostly it's been fantastic, exhilerating and just outright fun to own and drive. Noise has been a problem (and oil leaks), but I hope to be back on track in my car very soon! I'm glad I bought my GTR and I'm proud to own it.
It all comes down to individual choice, good luck!

I can't see how the Noble is too technical for you (subjective I know) but it is a space frame with a Ford V6 and two turbos,I've now owned my GTR for 6 years, time does fly fast! the only thing the Noble has over a factory spec GTR is power steering.
The main drawback (IMO) with the Noble is the transverse layout which ultimately severely limits the gearbox choice and therefore strength.
The stillborn M14 (with its longitudinal engine G/box set-up) would have been near carbon copy of the Ultima underneath the plastic, and nearer still Lee Nobles Fenix concept.
