How do the Factory Air Con controls work?

Last week I bought a TVR Tamora heater control panel off e-bay to use on my dash to control the heater / aircon. The TVR system actually wires via the dash ECU (god knows why it's so complicated?). Instead I'm changing the PCB at the back of the switch to make it simpler and making my own ECU / control box.
How does the Factory unit function? I have bought a Ford KA solenoid operated heater valve as per CJ's build which will be wired to the push switch on the tamora panel via a relay. Aircon of/on will be wired the same. From the wiring diagram it looks like the fan has 2 speeds controlled via a switch? If so I could build a 3 position switch triggered by the Tamora pot or... remove the resistor pack from the motor and drive a Pulse Width Modulated output to drive the fan at infinately variable speeds.

The controls are:
Heater....A cable pull, like a choke control, operates a rotary water valve in the hot line of the heater supply pipes for variable heat output.
Heater or AC fan....A rotary switch with off,1,2,3 positions. This must be at P1 or better before the AC will come on.
AC temp....A rotary switch with off,variable. Off is a detente position so you can feel it is off. From there is variable to control the temperature. From the switch are both electrical connections and a capillary tube going too, and strapped too, one of the pipes of the AC heat exchanger.
