Without sounding too silly, I'm hoping someone can tell me an obvious pipe to disconnect. I'm about to try and fit the water pump and i'd like to drain all the coolant out first. Just wondering if there's a special technique or just find anyone and undo it?

Depending on the engine there may be coolant drain plugs in the block, below the heads. Or, you may be able to drain from a lower hose. Rest asured when you remove the pump, water will drain from there and find it's own level. So long as the gasket face is nice and dry you should be able to install the new pump. I'd be tempted to just remove the pump and take it from there.

If its a SBC, remove the lower hose and stand back. The lowest bolts on the water pump will also drain the remaining out.

There are block drains in both sides of the block. There normal Allen pipe plugs. Just take one out and open up the cooling system.
