I have purchased Michelin Pilot Sports based on my experience with them on my other cars - where they were used purely as street tires/tyres and I don't know how they compare with either the Pirellis or the Goodyears. I have not started my build yet so whilst the Pilots will be used on the Ultima at some point my experience with them was on a Porsche and a BMW.
I should add that I bought them because "Tirerack" was blowing them out at $165USD each (335-30-18) so I couldn't resist.
I bought the fronts (235-35-18)from my local Porsche dealer again at a rock bottom price of $100USD each, because, although they were brand new take-offs, they couldn't be sold as new.
In summary my decision was based on price rather than on any real world experience on an Ultima.

www.partsrack.com (a viper parts supplier)is cheaper than tirerack for Michelins, I got a couple of rear 18" pilot sports for stock a while back when the prices crashed, worked out at around £95 !! the prices have sinced increased
I know a lot of people who track their cars have been switching from Michelin to the road legal Kumho slick's with great results
