Just a quick question, is the standard GTR cooling system and plumming setup sufficient for an heavily breathed on LS7?

So long as you plumb it up correctly (the ls engine uses reverse flow method and even some of those who should know better seem to get this wrong), it should be fine. This is based on north/central UK climate experience though.
Also, switch the fan at the engine and not the rad, either a remote switch in the top hose or via the ECU facility if available, this alone helps keep things under much better control in most installations.

what is the difference between the water travelling from left to right or vice versa ? The LS engines have a better efficiency so do not generate as much heat as a SBC, I used the ECU switch to turn on the rads and have a manual override in the cockpit. when you drive along with no windscreen as I did you will notice a nice hot wind coming in your face.

Do all LS engine types run the same direction or only the LS7?

Air locks! The hot water should enter the rad at the top and run down to the outlet at the bottom right. The vent hose is at the top left to allow air to escape. All LS engines are the same. They reversed the flow to keep the heads cooler. So the water exits the pump and returns to the thermostat.

There are several installations that run the rad hoses connected up in reverse, ie the hot water going into the bottom. Although it does not seem to cause too much of a problem (probably because the rad is canted) this method is not making best use of the rad and will probably suffer diagonal heat-soak thus reducing the radiators effectivness....IMHO.
