The manifold swops round easily enough. As for the oil pressure switch it has the same thread as the blanking plugs on the oil galleries. You could relocate the switch and use a blanking plug to close off where the switch was? Or a later 3 wire switch may fit as it's shorter. Are you certain the original switch will foul in the first place, it may clear the back of the throttle?
Katech has a nice solution.
It consists of two parts.

The second part is not absolutly required as your original Valley Cover can be modified by removing the oil pressure boss. (Milling machine is best but it's possible to do with a saw and a file if you are REALLY good at flat filing.)
The benefit of this method is that the oil pressure sender is not relocated (and you avoid that ugly tacked-on appearance of the relocated oil pressure sender). The draw back is that you have to fish the oil pressure sender electrical connector out of the loom and reroute it on top of the engine (left side) along with the ignition and fuel injection cables.
