S is the basic range of plasma, G is the next range up. Then you go GT (same technology but 3D) and VT which has a better display panel and a few other features, and is 3D.
The G range is the best you can get in the Panasonic range without going to 3D. Very good TVs, potentially the best non 3D set on the market.
I have a 50VT and it's bloomin marvellous!
ETA: I think there are actually more basic models than the S range, but I don't know the details of those.
Essentially, the G range gives you:
High contrast filter
Infinite black (blacker blacks)
THX mode
isf mode
USB HDD recording
More HDMI and USB sockets
