Sorry to say this but you're not going to get anything for £100. You ideally need an AV receiver which you can plug your sky box, projector and PS3 into. Then you buy a speaker package that plugs into that. You can get an all in one package but they aren't flexible for future system upgrades.

What about a sound bar for the short term, I know they'll naturally be nowhere as good but for 50 quid is something like this worth a punt.

If I were you I'd just get the best second hand amplifier and set of stereo speakers you can. You're very unlikely to get anything worth having even second hand at that budget in terms of home cinema.
£100 doesn't seem much budget for a new setup although I did find this.....

The big problem you will have is with audio-sync. Your PJ will have a processing delay with images, this means if you run the image to the PJ and the audio to some speaker set the image/sound will be out of sync.
The two ways to fix this are:
1) Run the speakers from the PJ, headphone out or optical out or whatever. The PJ will automatically delay the audio for you. The issue here is that in most cases this will be stereo only (some displays can output DD or DTS surround).
2) Route both sources via HDMI through an A/V reciever, as someone said. Using HDMI CEC your reciever and PJ will negotiate a delay for the A/V reciever to use. This will cost more than £100.
My advice would be to see if you can pick up an HDMI equipped A/V reciever and a set of speakers second hand for £100, I was going to suggest Mission 731 series speakers but they seem much more expensive than I remember!
