Surround Sound Headphones - Options

My wife complains the TV is too loud so want to get some surround sound headphones. I am confused about how the connections will work.

I have a Sony BDV E280 BluRay and surround sound system. Sky and the Amazon fire stick are connected to this via HDMI and then the HDMI output from that connects to the TV. Sounds comes always from the Sony surround system.

The Sony has no sounds outputs, the only output is HDMI. How can I connect the surround sound headphones to it? There TV has a 3.5mm output. If I connect it there will I get 5.1 sound from the TV if it doesnt support it? The manual for the Sony says:

You can select the output method where the
audio signal is output.
[Speaker]: Outputs multi-channel sound from
the system’s speakers only.
[Speaker + HDMI]: Outputs multi-channel
sound from the system’s speakers and 2-channel
linear PCM signals from the HDMI (OUT) jack.
[HDMI]: Outputs sound from the HDMI (OUT)
jack only. Sound format depends on the
connected component.
• When [Control for HDMI] is set to [On] (page 50),
[Audio Output] is set to [Speaker + HDMI]
automatically and this setting cannot be changed.
• Audio signals are not output from the HDMI (OUT)
jack when [Audio Output] is set to [Speaker + HDMI]
and [HDMI1 Audio Input Mode] (page 50) is set to
[TV]. (European models only.)
• When [Audio Output] is set to [HDMI], the output
signal format for the “TV” function is 2-channel
linear PCM.
