Was considering either the Panasonic TX-65JZ1500 or TX65JZ2000, which currently go for between £2499 - £2799 but wondering how much of a difference there is between cheaper and more premium OLEDs?

Can get a 77” OLED, e.g. LG OLED77A16LA, LG OLED77B16LA or Philips 77OLED806, for £2499 - £2999.

My initial feeling is that it might be better to go for the bigger screen as it will be more immersive etc but this would also be our main video source therefore I also want it to be as good as it can be. (Currently have a 75” FHD Sony LCD set, which I chose over a smaller 4K set maybe 3 or 4 years ago - I don’t mind going down to 65” if there is going to be a significant difference)

The only real way to tell (without seeing them working) is to look at the specs.
I had a look at the LGs when i bought one a couple of years ago (so don't know if this still applies) and most of the models had the same processor/video standard.
The major difference was in the speakers, sound output and also the stand/wall bracket.
If there's no real hurry (and you don't mind last year's model), the prices of LGs will take a dive early next year when the new models are announced.
The most important thing is try to see them working (ideally next to each other), but that is becoming harder these days.

Panasonic tvs; made in China
Phillips tvs; made in China by TPV
LG tv's; made in China.
Take your pick, but I would suggest buying a lower priced set and spending the savings on an extended warranty.

TBH I’d probably be looking at getting them from Richer Sounds or John Lewis with their extended warranties so that aspect would be taken out of the equation.
