If you've been watching it on 5USA, they're normally shown about 18 months after broadcast on NBC in the USA, and 12 months after first broadcast on Sky / Now TV in the UK as they're the primary rights holder.
Sky showed S25 starting in mid August '24 - only 13 eps due to the writers guild strikes so it finished in December. I'd expect 5USA to be showing it once the current run of Law & Order finishes (as recently the last few years they've been going from one to the other consecutively) so probably around August / September '25. Or if you have Sky / Now access they should be available to stream / box set.
