It is rare that I watch every show/series through to the end.

I'll start off enjoying something, then after a few seasons I'll either get bored, or the writing goes down the drain, the story goes weird, the best characters leave or get killed off, or the show just generally goes a bit rubbish in one way or another as they milk it for another couple of years rather than just promptly concluding the story arc in an engaging way.

Occasionally I will find something that is so good that I'll be hooked for every episode, and watch until the very end. The below are IMO excellent, and do not feature a single episode that isn't worth watching:

The Sopranos
Homeland
Narcos / Narcos Mexico / El Chapo
Mad Men
The Americans
Sons of Anarchy
For all mankind
Ozark
The Crown

Honourable mentions go to:

The X-Files
Breaking Bad

Both of which I watched until their conclusion, but I did fast forward a few episodes where it either got far too silly (X Files) or a bit too 'oh for goodness sake' (Breaking Bad).

I either watch a couple of episodes and stop watching if I'm not into it or I watch every episode. Some shows are good and I finish the series but in terms of greatness, there's the usual contenders (Breaking Bad, Better Call Saul, Soprano's and The Wire, etc.) On top of those, stand out TV shows where I'm hooked from start to end include: Mr. Inbetween & Gomorrah. Just superb, gripping TV.

I don't think Sons OA could ever be classed as so good. The series where they went to Ireland was risible.
I did however watch every episode of every series as it was good fun.

I agree, the 6 episodes in Ireland were pretty poor, but I watched them as it still contributed to the overall storyline, and I can forgive 6 dodgy episodes out of 92.

For me, the whole thing was fairly gripping from start to finish, and I liked the way almost every characters story was concluded in some way (either in a good way, or usually something fairly gruesome...)

Watched all of The Assasin recently but but it isn't great IMO.

Watched all of Cobra Kai too which I enjoyed but it took me a while to get through them and parts became repetitive.

Mindhunter - a drama series in which the FBI interviewed jailed serial killers to understand their thinking and track down others. IMHO the best series on Netflix.

I'm the same, once I've got a few episodes in I'll usually carry on to the end. I've just finished Better Call Saul and I felt the last few episodes were a bit of a stretch, but the rest of it was good. I really enjoyed most of "Suits", but it went off towards the end and if I see one on TV and watch it, I don't feel that it's as good a second time around. I don't have that problem with "Spooks", though, a great series IMO.
